I got them onto cutlets a while back but Christ they are expensive. So I thought I'd try a rack as a cheaper option. Turned out to be a hit and the yummier option too! Pierced the top and rubbed in salt and herbs then in fan forced oven for 30 mins at 170 deg C. Then rested for 10 before I cut it. Probably go 5-10 mins less for more pink. As it was for the kids too I only had the slightest pink tinge.

Apparently it's just a bog standard gluten free sponge cake with added walnuts and Camp coffee and a normal buttercream recipe with added camp.
